IRISH COLCANNON MASH POTATOES FOR ST PATRICK’S DAY

Colcannon was actually the main dish, like a casserole, eaten regularly in Ireland as the ingredients were readily available. Today, Colcannon is a classic side dish served next to your savory corned beef and cabbage. While homemade Colcannon is best, to save a lot of work so you can simply enjoy the dinner, you can use already prepared mash potatoes from the dairy case and you can even make this a day ahead and reheat.

Ingredients:

  • 1 medium head cabbage (about 2 pounds), shredded
  • 4 pounds medium potatoes (about 8), peeled and quartered
  • 4 smoked pork chops, diced or shredded
  • 2 cups whole milk
  • 1 cup chopped green onions
  • 1/4 cup Kerrygold Butter Garlic & Herb, melted
  • salt and pepper to taste

Place Shredded cabbage and 2 cups water in a large pot and bring to a boil. Reduce heat and simmer, covered, until cabbage is tender, about 10 minutes.

Drain, reserving cooking liquid; keep cabbage warm in separate dish.

Put reserved cooking liquid back in the pot and add potatoes and additional water to cover potatoes and bring to a boil. Reduce heat; cook, uncovered, until potatoes are tender, 15-20 minutes.

Meanwhile, place milk, green onions, salt and pepper in a small saucepan; bring just to a boil and remove from heat.

Drain potatoes; place in a large bowl and mash. Add milk mixture; beat just until blended. Stir in cabbage and smoked pork chops.

To serve, drizzle with melted Kerrygold Butter Garlic & Herb.

What other greens can you use instead of cabbage?

Cabbage can easily be substituted with any heartier greens you have on hand. Curly kale or savoy cabbage, which is a crinkled, heartier green cabbage.

What kind of potatoes should you use to make colcannon?

For the perfect colcannon, choose what is categorized as a floury potato. They should have more starch and less water and will produce a fluffier mash. Russet or Idaho potatoes will be your go-to potato.

What other meat can you use instead of smoked pork chops?

Smoked Pork Chops can easily be substituted with any pork you have available. Try it with ham or cooked bacon.
